Another week of failed eating vegetables. The process of moving has really shook up my schedule and my streak of eating vegetables. I also realize if I start off the week with a few bad days of not eating vegetables, I throw in the towel and try to start again for the following week. Once I realize that there is no way I can reach my goal, I stop trying for the rest of the week. Hopefully next week I can meet my goal!! |

This week has been difficult to eat more vegetables. Money has been tight and money has been more reinforcing than earning my Starbucks at the end of the week. My husband and I are also in the midst of moving, so we have boxes all over the house. Plates and pots and pans are all packed away, so it has been difficult to find the time or resources to be able to get my vegetables in. Hopefully once we are moved in I can return to my normal schedule! |

Eating more vegetables is starting to become more of a habit. I have become creative with my recipes in how to get my fill of vegetables. It has been fun to ask around for recipes and try new things. I have found that it does take a lot of extra thought and planning ahead to eat healthy. It is so much easier just to grab a bagel or a bar than to cook up vegetables or to make a shake that has vegetables in it. I do feel accomplished when I meet my daily goal, however and that is a good feeling! |

I have noticed that my grocery bill is going up because vegetables are very expensive to buy. I still think this is worth and that the money will pay off in the long run. I am already feeling the benefits of the added vegetables with increased energy as well as not getting sick. I am around a lot of sick kids right now, but I have stayed healthy! Attributing this to my eating habits reinforces my vegetable eating behavior. |
