I was pleasantly surprised that I could replace one of my breakfast with salad on Wed when I had classes from early morning till afternoon. I could sustain through it with just some dark chocolate in between. Then I still had salads for lunch and dinner. This reminds me that I don't have to eat a huge breakfast on the day when I would need to have a late or no lunch. A healthy salad breakfast can also sustain me!

I love trying to making my own salad dressing -- they are one of my biggest motivators to eat many salads a day!
I need to add more protein sources, not just tofu, but also lentils and peas. I tried to avoid animal protein, but sometimes would consume a bit seafood.
